Small bakeries, pizzerias, cafes and caterers that are tired of hand-mixing or overworking a kitchen stand mixer will like the Serv-Ware PM10LA. It is a 10-quart planetary mixer with a gear-driven transmission and a cast iron body, sized for batches of dough, batter, icing and whipped cream on a prep counter.
A 1 HP motor drives three speeds of 108, 195 and 355 RPM and handles up to 7 lb of dough per batch. It runs on ordinary 120V power at 6.25 amps and comes with a dough hook, flat beater and wire whip, so you can start mixing the day it arrives.
What you will notice in day-to-day use
- Torque for real dough. A gear-driven, high-torque transmission with heat-treated steel gears and shafts keeps working through stiff pizza and bread dough instead of slipping like a belt drive.
- Three speeds, three jobs. Use low for dough, medium for batters and fillings, and high for whipping cream and meringue.
- Safety built in. The stainless bowl guard and bowl lift are interlocked, so the mixer will not run with the guard open.
- Protects itself. Thermal overload protection shuts the motor down before it overheats on a heavy batch.
- Low upkeep. The transmission is permanently lubricated, so there is no routine gearbox oiling.

Before it arrives
- Power: plugs into a standard 120V outlet with a NEMA 5-15 receptacle; at 6.25 amps a dedicated circuit is not usually required, but avoid sharing with other heavy loads.
- Counter space: set it on a sturdy, level work table or counter that can carry the weight and vibration of a gear-driven mixer.
- Delivery: shipping weight is about 100 lb, so plan for two people to lift it into place.
