The MagiKitch'n MKE-36-E is the griddle you buy when the flat top is the heart of the menu. A full 1-inch thick polished steel plate, three independently controlled zones and a heavy, double-walled stainless body make it a natural fit for high-volume breakfast, burger and cheesesteak operations, hotels and institutional kitchens that run the griddle all day.
Incoloy sheathed elements are pressure clamped to the underside of the plate and deliver 17.1 kW in total, about 5.7 kW for every 12 inches of width. Each zone has its own electric thermostat (200°F to 550°F) and on/off switch, and the temperature probes are embedded right in the plate, so the controls react to the actual cooking surface, not the air around it.
What you will notice in day-to-day use
- Heat that stays put. A 1" thick plate is a big thermal reservoir; you can load it edge to edge with frozen patties and the surface recovers fast.
- Three zones, three temperatures. Thermostats every 12" with individual on/off switches let you run a hot sear zone, a medium zone and an idle zone to save energy in slow periods.
- Accurate control. Probes embedded in the plate read the real surface temperature for faster, more accurate response.
- Grease handled properly. A 3-1/2" spatula-wide front trough with a fully welded chute drains to a large 3.75 gallon grease box with a splash-zone compartment.
- Quick to wipe down. Extra smooth 12 gauge back and side splash, no exposed fasteners, and a removable cabinet back make closing cleanup faster.
- Fits your line. Ships with 4" legs that can be removed to flush-mount the solid-panel cabinet base on a counter or stand.
Choosing your setup
Voltage: pick the voltage and phase that match your kitchen's electrical service above. All four versions are rated 17.1 kW; the amp draw per line is in the table below. The griddle is field wired on a dedicated circuit (an optional 6 ft, 60 amp cord with NEMA 15-60P plug is offered by the factory for three-phase service).
| Electrical service | Amps per line |
|---|---|
| 208V, single phase | 82.2 A |
| 240V, single phase | 71.3 A |
| 208V, three phase | 47.5 A |
| 240V, three phase | 41.1 A |
Want tighter temperature control up to 550°F? The MKE-36-ST adds solid state thermostats. The MKE series also comes in 24", 48" and 60" widths.
