Bakeries, commissaries and busy restaurant kitchens often have wares that never fit a standard dish machine. The Jackson Conserver XL-HH has a tall 27" chamber that takes 60-quart mixing bowls and sheet pans, so the big pieces do not end up in the sink. It sanitizes chemically and plugs into a 115V circuit.
Capacity is up to 41 racks per hour (39 at NSF-rated load time), roughly 1,025 dishes or 1,476 glasses an hour. The normal cycle runs 86 seconds and uses 1.53 gallons of water per rack. Sanitizing is chemical, with wash and rinse water at 120°F minimum and 140°F recommended.
What you will notice in day-to-day use
- Room for the bulky stuff. The 27" vertical clearance handles mixing bowls, sheet pans and tall containers along with regular racks.
- No plastics or soft metals inside. The machine is built from stainless steel, including the self-draining wash pump.
- Clean water every load. Fill-and-dump operation discards the dirty wash water and rinses with fresh water each cycle.
- Low maintenance chemistry. Detergent and sanitizer pumps are built in, and indicator lights show when a product needs replacing.
- Simple controls. Top-mounted controls, a wash thermometer and a delime mode keep the daily routine short.
- Works in straight or corner layouts. A conversion kit switches it between the two.
Choosing your setup
Power: the standard XL-HH is a 115V single-phase machine with a 10.0 A total load, needing a circuit of at least 12.5 A ampacity and a 20 A maximum overcurrent device. A 230V version is available as an option.

Before it arrives
- Measure your ceiling and any hood: the machine stands 79" tall and needs 88-1/2" with the door open.
- Have a licensed electrician supply a dedicated 115V circuit sized from the ratings above.
- Plan for 120°F or hotter water at 20 ± 5 PSI. Jackson recommends a tank-type water heater over a tankless model.
- Leave 4" at the rear (and at the side for corner installs). The crate weighs 269 lb.
