Groen XS-240-12-3 6-Pan Intek Convection Steamer - Countertop, Connectionless, 240V 3-Phase
Vegetables, rice and seafood come out of the XS-240-12-3 in the pans they went in on, six 12 x 20 x 2-1/2 in hotel pans. The steam is raised by electric elements, so the site needs no boiler room and no fuel line. Cooking by steam rather than by water keeps the color and the weight in the vegetable, which is why the format is specified at all.
Being connectionless, it is installed with a circuit and nothing else, the reservoir being filled at the unit rather than piped to it. It is rated at 12 kW. Circulation is the other half of it: this is a convection steamer, so the steam is moved across the pans instead of being left to find its own way round them.
The cavity is 14 gauge reinforced stainless, and the door is a two panel assembly with a 14 gauge stainless outer skin, which is the part that takes the knocks in a busy kitchen. Indicator lights cover COOK, STANDBY, HEAT and LOW WATER, which is the whole of what an operator needs to see at a glance. The cavity is lined in stainless steel, which is the surface that gets wiped at the end of a shift. The panel is deliberately plain: an ON-OFF button, a 60 minute timer that also runs continuously, and a READY light. It carries an NSF listing.
Mounting is table top, which keeps the floor clear but puts the load on the counter. Power is 240 V three phase, fixed when the unit is ordered. The draw is 29.1 A. The space to allow is 28-5/16 Inch wide by 15-1/2 Inch deep and 16 Inch high. The door swing decides the rest of the layout around it.
