Groen TDHC-20C 5 Gallon Steam Jacketed Kettle - Manual Tilt, Countertop
5 gallons is the working charge of the TDHC-20C, and it is a bench vessel rather than a floor one. Mounting is four bolts into a bench top, which is the whole of the mechanical installation. Firing happens inside the unit rather than under a pot, which is what lets the kettle hold a temperature instead of chasing it.
The jacket is a sealed steam space against the vessel wall, so heat crosses it evenly instead of concentrating under the batch. Groen rates the burner at 31,000 BTU/hr, with the jacket rated to 50 PSI maximum. One operator works the crank, and the mechanism holds its position when the handle is released. Heating stops above 12 degrees of tilt, by design rather than by the operator remembering.
The vessel and its skin are both 304 stainless, welded rather than bolted together, which is why cleaning is a wash rather than a strip-down. Standard lining is type 304 stainless, though 316 is offered in its place where tomato is constant. The control package is specified with the order as Classic, Advanced or Cook2Temp. The listings are CSA, NSF and ASME.
A gas connection (natural gas or propane) and a hood above the unit are the two site items to settle early. Beyond that, a 115 V control circuit is all the electrical work, rated 1 A. Fixing is into the counter, so a light table will not do. The route the filled pans take is part of the layout rather than an afterthought.
