Groen TDH-40C 10 Gallon Steam Jacketed Kettle - Manual Tilt, Countertop

The TDH-40C mounts on a table or a stand and holds 10 gallons at the height a cook already works at. Firing happens inside the unit rather than under a pot, which is what lets the kettle hold a temperature instead of chasing it. It replaces a rank of pots rather than a single one.

Heat reaches the food through a steam jacket rather than a heated plate, and condensing steam holds one temperature across the whole heated surface. Input at the burner is 52,000 BTU/hr, with the jacket rated to 50 PSI maximum. Tilting is manual, with no gearbox between the handle and the vessel. Heating stops above 12 degrees of tilt, by design rather than by the operator remembering.

The body is type 304 stainless, welded up as one piece, which is why cleaning is a wash rather than a strip-down. The standard liner is 304 stainless, though 316 is offered in its place where tomato is constant. The control package is specified with the order as Classic, Advanced or Cook2Temp. It carries CSA, NSF and ASME listings.

Footprint is 27-5/8 Inch by 20-1/8 Inch, with an overall height of 29-1/2 Inch, so the counter has to give up that much working surface. A gas connection (natural gas or propane) and a hood above the unit are the two site items to settle early. Fixing is into the counter, so a light table will not do.
