Groen TDH-24C 6 Gallon Steam Jacketed Kettle - Manual Tilt, Countertop

A natural gas or propane burner raises the steam for the TDH-24C, which holds 6 gallons without a plant boiler behind it. It fastens to whatever it sits on, and that surface has to carry the kettle full. It is bought where the batch is made in quantity rather than to order.

Heat reaches the food through a steam jacket rather than a heated plate, and condensing steam holds one temperature across the whole heated surface. Firing rate is 31,000 BTU/hr, and the jacket carries a 50 PSI maximum. The vessel is tipped by hand, which at this batch size is quicker than cranking and leaves less to service. Past 12 degrees of tilt the heat is interrupted, which protects the steam source while the batch is pouring.

Every exposed surface is 304 stainless, welded up as one piece, so there is no lap joint inside to hold a residue. The standard liner is 304 stainless, and 316 can be specified instead for a kitchen working in brine. Three control packages are available: Classic, Advanced and Cook2Temp. CSA, NSF and ASME appear on the sheet.

The TDH-24C measures 24-3/4 Inch by 18 Inch and stands 30-3/8 Inch high, small enough to sit between a range and a pass without rearranging the line. The site needs gas (natural or propane) at the burner and extraction over the kettle. The bench takes the whole load, which is the one structural question on this installation.
