Groen TDH-20C 5 Gallon Steam Jacketed Kettle - Manual Tilt, Countertop

Groen builds the TDH-20C to 5 gallons, small enough to stay inside the prep line. The kettle fixes to a table, a counter or a stand rather than standing free on it. Steam for the jacket is made on the machine over a burner, so no house steam has to be found for it.

The jacket is a sealed steam space against the vessel wall, so heat crosses it evenly instead of concentrating under the batch. Gas input is 31,000 BTU/hr and the jacket is rated to 50 PSI maximum. Tilting is manual, with no gearbox between the handle and the vessel. A safety cut-off shuts the heat off once the vessel passes 12 degrees of tilt, so a tilted kettle cannot be left heating.

The body is type 304 stainless, welded rather than bolted together, which leaves no internal seam for product to sit in. Standard lining is type 304 stainless, with a 316 liner available as an option where the product is acidic. Controls are offered in three packages, Classic, Advanced or Cook2Temp, and the choice is made at order rather than in the field. It carries CSA, NSF and ASME listings.

The space to allow is 23-3/4 Inch by 18 Inch, with 30-3/8 Inch of height, which is a bench run rather than a corner. Gas is the utility that drives the install: a supply to the burner and a ventilation path above it. Because it bolts down, the counter under it has to be able to carry the kettle full.
