Groen TDBC-48A 12 Gallon Steam Jacketed Kettle - 2/3 Jacket, Manual Tilt, Countertop

The steam behind the 12 gallons in the TDBC-48A is made on the machine, by element rather than by flame. It bolts down through its base, so the counter it stands on becomes part of the installation. It is bought where the batch is made in quantity rather than to order.

Jacketing runs to two thirds of the vessel height, so heat enters over an area rather than at a point. The jacket is stamped for 50 PSI maximum working pressure. The crank lets one person tilt the vessel precisely rather than in a single movement. Past 12 degrees of tilt the heat is interrupted, which protects the steam source while the batch is pouring.

The body is type 304 stainless, welded up as one piece, so there is no lap joint inside to hold a residue. Interior polishing runs to 180 emery grit, so there is little for product to cling to. The standard liner is 304 stainless, which is the grade Groen builds as standard here. Three control packages are available: Classic, Advanced and Cook2Temp. Groen lists the TDBC-48A to UL, NSF and ASME.

It is offered for 208 V or 240 V, single or three phase service; choose the electrical option above. The bench takes the whole load, which is the one structural question on this installation. The route the filled pans take is part of the layout rather than an afterthought.
