Groen TDBC-40A 10 Gallon Steam Jacketed Kettle - 2/3 Jacket, Manual Tilt, Countertop
The TDBC-40A mounts on a table or a stand and holds 10 gallons at the height a cook already works at. Power is the only service it asks for, since the steam is raised inside the unit. It takes a standing job off the range line.
The heated zone reaches two thirds of the way up, which is what keeps a starch-heavy batch off a hot bottom. The jacket is stamped for 50 PSI maximum working pressure. The crank lets one person tilt the vessel precisely rather than in a single movement. Past 12 degrees of tilt the heat is interrupted, which protects the steam source while the batch is pouring.
Construction is 304 stainless throughout, welded up as one piece, which leaves no internal seam for product to sit in. The interior is polished to 180 emery grit, a finer finish than a pan carries and one that leaves nothing for a thick product to key into. The standard liner is 304 stainless. Three control packages are available: Classic, Advanced and Cook2Temp. Groen lists the TDBC-40A to UL, NSF and ASME.
It is offered for 208 V or 240 V, single or three phase service; choose the electrical option above. Because it bolts down, the counter under it has to be able to carry the kettle full. The pour side needs room for a pan, and the front of the vessel stays clear.
