Groen TDBC-24A 6 Gallon Steam Jacketed Kettle - 2/3 Jacket, Manual Tilt, Countertop
Because the steam source is electric and carried on board, the TDBC-24A can hold 6 gallons in a building with no gas. It fastens to whatever it sits on, and that surface has to carry the kettle full. The batch it holds is sized to a service rather than to a shift.
The heated zone reaches two thirds of the way up, which is what keeps a starch-heavy batch off a hot bottom. Groen rates the jacket to 50 PSI maximum. Tilting is crank-driven and self-locking, so a pour can be stopped part way and restarted without losing the angle. The interlock is a tilt cut-off at 12 degrees, and it takes the heat off before the jacket is off level.
Every exposed surface is 304 stainless in one welded piece. A 180 emery grit interior is specified, which shows every time the vessel is washed. Groen lines the vessel in 304 stainless as standard, which is the grade Groen builds as standard here. Groen builds it with Classic, Advanced or Cook2Temp controls, which is a decision about how much of the cook is automated. UL, NSF and ASME appear on the sheet.
It is offered for 208 V or 240 V, single or three phase service; choose the electrical option above. The pour side has to stay clear, because a pan sits under the rim. A cook has to be able to stand square to it, which the counter layout has to allow.
