Water boiled by element in a sealed reservoir feeds the jacket of the TDB/6-10, which holds 2.5 gallons. The vessel is carried on a bench at working height rather than on legs of its own. It is bought where the batch is made in quantity rather than to order.

A steam jacket surrounds the cooking vessel, so heat transfer happens over that whole area rather than at a burner face. Element rating is 4 kW, and the jacket carries a 50 PSI maximum. Manual tilt keeps the mechanism simple: a handle, a trunnion and the operator's judgement about the pour.

The vessel and its skin are both 304 stainless, welded up as one piece, so there is no lap joint inside to hold a residue. Interior polishing runs to 180 emery grit, so there is little for product to cling to. The standard liner is 304 stainless, and 316 can be specified instead for a kitchen working in brine. Temperature is set on a thermostat, and indicator lights report what is happening inside. It carries UL, NSF and ASME listings.

The TDB/6-10 measures 19 Inch by 16 Inch and stands 23-3/4 Inch high, small enough to sit between a range and a pass without rearranging the line. The supply on this build is 208 V single phase, which is a dedicated circuit rather than a receptacle in most kitchens. The bench takes the whole load, which is the one structural question on this installation.
