Groen TDB-48C 12 Gallon Steam Jacketed Kettle - 2/3 Jacket, Manual Tilt, Countertop

The TDB-48C takes a station off the range at 12 gallons rather than by the pot. The kettle fixes to a table, a counter or a stand rather than standing free on it. Its steam source is self-contained and electrically heated, so the site needs a circuit rather than a boiler room or a gas main.

Because the jacket wraps two thirds of the wall, a thick product takes its heat from the side rather than from one spot on the bottom. Jacket pressure is capped at 50 PSI. Tilting is manual, with no gearbox between the handle and the vessel. Past 12 degrees of tilt the heat is interrupted, which protects the steam source while the batch is pouring.

The vessel and its skin are both 304 stainless, welded up as one piece. A 180 emery grit interior is specified, which shows every time the vessel is washed. The standard liner is 304 stainless, with 316 available as an alternative on order. Classic covers power, temperature and the warning lights, Advanced adds a display and a timer, and Cook2Temp adds the probe. It carries UL, NSF and ASME listings.

It is offered for 208 V or 240 V, single or three phase service; choose the electrical option above. The pour side has to stay clear, because a pan sits under the rim. It works best sited where the pans it fills are already stacked.
