Groen TDB-48A 12 Gallon Steam Jacketed Kettle - 2/3 Jacket, Manual Tilt, Countertop
Because the steam source is electric and carried on board, the TDB-48A can hold 12 gallons in a building with no gas. It bolts down through its base, so the counter it stands on becomes part of the installation. It earns its place on work that would otherwise tie up a range.
Because the jacket wraps two thirds of the wall, a thick product takes its heat from the side rather than from one spot on the bottom. The jacket is stamped for 50 PSI maximum working pressure. Groen designs the tilt for one person to empty the kettle by hand at full capacity, which removes the ladle from the job. Past 12 degrees of tilt the heat is interrupted, which protects the steam source while the batch is pouring.
Construction is 304 stainless throughout, welded into a single piece, so there is no lap joint inside to hold a residue. Interior polishing runs to 180 emery grit, so there is little for product to cling to. As built, the liner is type 304 stainless, with 316 available as an alternative on order. Three packages are offered, from Classic with its temperature knob and indicator lights up to Cook2Temp with a core probe. It carries UL, NSF and ASME listings.
It is offered for 208 V or 240 V, single or three phase service; choose the electrical option above. The bench takes the whole load, which is the one structural question on this installation. A cook has to be able to stand square to it, which the counter layout has to allow.
