Groen TDB-40C 10 Gallon Steam Jacketed Kettle - 2/3 Jacket, Manual Tilt, Countertop

Electric elements raise the steam for the TDB-40C, a 10-gallon kettle that needs a circuit and nothing else. It fastens to whatever it sits on, and that surface has to carry the kettle full. It replaces a rank of pots rather than a single one.

The heated zone reaches two thirds of the way up, which is what keeps a starch-heavy batch off a hot bottom. Groen rates the jacket to 50 PSI maximum. The vessel is tipped by hand, which at this batch size is quicker than cranking and leaves less to service. Heating stops above 12 degrees of tilt, by design rather than by the operator remembering.

Groen specifies type 304 stainless here, welded up as one piece, which is why cleaning is a wash rather than a strip-down. Groen finishes the inside to 180 emery grit. The standard liner is 304 stainless, though 316 is offered in its place where tomato is constant. Three packages are offered, from Classic with its temperature knob and indicator lights up to Cook2Temp with a core probe. UL, NSF and ASME appear on the sheet.

It is offered for 208 V or 240 V, single or three phase service; choose the electrical option above. Fixing is into the counter, so a light table will not do. The route the filled pans take is part of the layout rather than an afterthought.
