Groen TDB-24C 6 Gallon Steam Jacketed Kettle - 2/3 Jacket, Manual Tilt, Countertop

Because nothing burns in it, the TDB-24C puts 6 gallons of jacketed volume into a kitchen without a flue. The vessel is carried on a bench at working height rather than on legs of its own. The work it is bought for is production rather than short order.

The heated zone reaches two thirds of the way up, which is what keeps a starch-heavy batch off a hot bottom. Maximum working pressure in the jacket is 50 PSI. Manual tilt keeps the mechanism simple: a handle, a trunnion and the operator's judgement about the pour. The interlock is a tilt cut-off at 12 degrees, and it takes the heat off before the jacket is off level.

Every exposed surface is 304 stainless, welded into a single piece. A 180 emery grit interior is specified, which shows every time the vessel is washed. Groen lines the vessel in 304 stainless as standard, with 316 available as an alternative on order. Classic covers power, temperature and the warning lights, Advanced adds a display and a timer, and Cook2Temp adds the probe. Groen lists the kettle to UL, NSF and ASME.

It is offered for 208 V or 240 V, single or three phase service; choose the electrical option above. The pour side has to stay clear, because a pan sits under the rim. The pour side needs room for a pan, and the front of the vessel stays clear.
