Groen TDB-20C 5 Gallon Steam Jacketed Kettle - 2/3 Jacket, Manual Tilt, Countertop
Groen builds the TDB-20C to 5 gallons, small enough to stay inside the prep line. The vessel is carried on a bench at working height rather than on legs of its own. Heating is by sealed element rather than by flame, so nothing about the installation involves a flue.
Jacketing runs to two thirds of the vessel height, so heat enters over an area rather than at a point. Maximum working pressure in the jacket is 50 PSI. Manual tilt keeps the mechanism simple: a handle, a trunnion and the operator's judgement about the pour. A safety cut-off shuts the heat off once the vessel passes 12 degrees of tilt, so a tilted kettle cannot be left heating.
Every exposed surface is 304 stainless, welded rather than bolted together, which leaves no internal seam for product to sit in. Interior polishing runs to 180 emery grit, so there is little for product to cling to. Standard lining is type 304 stainless, with 316 available as an alternative on order. The Classic package is a knob and lights, Advanced adds a timer and an LED display, and Cook2Temp adds a core probe. It carries UL, NSF and ASME listings.
It is offered for 208 V, single or three phase service; choose the electrical option above. Because it bolts down, the counter under it has to be able to carry the kettle full. A cook has to be able to stand square to it, which the counter layout has to allow.
