Set on a counter rather than on the deck, the TDB-20A brings 5 gallons to the line. Heating is by sealed element rather than by flame, so nothing about the installation involves a flue. It is bought where the batch is made in quantity rather than to order.

Steam occupies the lower two thirds of the jacket space, spreading the load over a curved wall instead of a flat plate. The sheet gives 50 PSI as the maximum working pressure. The operator tips the vessel directly, so the pour is as fast or as slow as the batch needs. A safety cut-off shuts the heat off once the vessel passes 12 degrees of tilt, so a tilted kettle cannot be left heating.

The body is type 304 stainless in one welded piece, which leaves no internal seam for product to sit in. Interior polishing runs to 180 emery grit, so there is little for product to cling to. As built, the liner is type 304 stainless, with 316 available as an alternative on order. Three packages are offered, from Classic with its temperature knob and indicator lights up to Cook2Temp with a core probe. The listings are UL, NSF and ASME.

It is offered for 208 V or 240 V, single or three phase service; choose the electrical option above. Because it bolts down, the counter under it has to be able to carry the kettle full. The pour side needs room for a pan, and the front of the vessel stays clear.
