Groen HY-3E 3-Pan HyPerSteam Convection Steamer - Stand, Pressureless, Auto-Delime, 208V 3-Phase
A kitchen with no steam plant behind it can still run the HY-3E, because the unit makes its own steam and holds three 12 x 20 x 2-1/2 in pans. Groen heats it with electric elements, so the site needs no boiler room and no fuel line. Cooking by steam rather than by water keeps the color and the weight in the vegetable, which is why the format is specified at all.
The unit is pressureless, with its own steam generator feeding the cavity, so nothing has to be vented before a pan is checked and put back. Input is 8 kW. Convection is what makes a full load even, because moving steam reaches the back of a cavity where still steam does not. Deliming is started from the panel and runs as a cycle, which is the difference between descaling on a schedule and descaling after a breakdown.
Stainless steel is used for the cavity and the cabinet, and the panels lift off rather than unbolt piece by piece. The door is air-insulated and field-reversible, and its seal is a one-piece part that is replaced rather than repaired. The cavity is lined in stainless steel, which is the surface that gets wiped at the end of a shift. The panel is deliberately plain: an ON-OFF button, a 60 minute timer that also runs continuously, and a READY light. The listings are UL and NSF.
It is a countertop machine, so the bench it stands on has to take it loaded and wet. The supply is 208 V three phase. The space to allow is 30-13/16 Inch wide by 21-5/8 Inch deep and 16 Inch high. The clearance a service technician needs is worth settling before the unit is boxed in.
