Groen DEES/40A 40 Gallon Steam Jacketed Kettle - Manual Tilt, Enclosed Base

No gas and no plant boiler are needed for the DEES/40A, which raises steam electrically for its 40 gallons. The kettle stands free on the floor rather than being hung from anything. The batch it holds is sized to a service rather than to a shift.

Heat reaches the food through a steam jacket rather than a heated plate, and condensing steam holds one temperature across the whole heated surface. The jacket is stamped for 50 PSI maximum working pressure. A crank meters the pour, which matters when the batch has to go into more than one pan.

The kettle is built in 316 stainless in one welded piece. A 180 emery grit interior is specified, which shows every time the vessel is washed. The wetted liner is 316 stainless, which is the grade to specify where brine and acid are in the vessel daily. Classic covers power, temperature and the warning lights, Advanced adds a display and a timer, and Cook2Temp adds the probe. Groen lists the kettle to UL, NSF and ASME.

It is offered for 208 V or 240 V, single or three phase service; choose the electrical option above. The pour side needs an aisle wide enough for a loaded transport pan. A drain within reach shortens the wash-down at the end of a run.
