Groen DEE/4T-60CTA/3 60 Gallon Steam Jacketed Kettle - 2/3 Jacket, Twin Shaft Agitator

The DEE/4T-60CTA/3 is a floor machine of 60 gallons, with the agitator drive carried over the vessel. Elements heat water in a sealed reservoir and the jacket takes its steam from there, which keeps the whole heat path inside the machine. A kitchen buys it to stop cooking the same batch three times a day.

The jacket covers the lower two thirds of the body, which puts heated metal alongside the batch as well as beneath it. Jacket pressure is capped at 50 PSI. Emptying is by self-locking worm and gear tilt, so the vessel holds whatever angle it is left at during the pour. Two shafts rather than one is the difference on a product dense enough to stall a single agitator.

Food contact is 316 stainless and the outer shell 304. The liner is type 316 stainless, chosen for product that would pit a lighter grade over time. Groen builds it with Classic or Advanced controls and nothing more elaborate. It carries UL, NSF and ASME listings. Cleaning is a wash and a rinse rather than a strip-down.
