Groen DEE/4T-40CTA/3 40 Gallon Steam Jacketed Kettle - 2/3 Jacket, Twin Shaft Agitator

The DEE/4T-40CTA/3 is a floor machine of 40 gallons, with the agitator drive carried over the vessel. Elements heat water in a sealed reservoir and the jacket takes its steam from there, which keeps the whole heat path inside the machine. It takes a standing job off the range line.

Steam occupies the lower two thirds of the jacket space, spreading the load over a curved wall instead of a flat plate. The sheet gives 50 PSI as the maximum working pressure. Worm gearing under the crank carries the weight, so the vessel tips at the speed the handle is turned. The TA/3 head carries two agitator shafts, which share the work of turning a mass a single paddle would drag through.

The interior is 316 stainless, the exterior 304. Type 316 stainless lines the vessel, and that grade is what carries an acidic menu year after year. Controls come as either the Classic or the Advanced package. The listings are UL, NSF and ASME. Cleaning is a wash and a rinse rather than a strip-down.
