Groen DEE/4T-40CINA/2 40 Gallon Steam Jacketed Kettle - 2/3 Jacket, Inclined Agitator

The DEE/4T-40CINA/2 is a floor machine of 40 gallons, with the agitator drive carried over the vessel. The kettle makes its own steam electrically, which suits a building with no gas service. It is bought where the batch is made in quantity rather than to order.

Jacketing runs to two thirds of the vessel height, so heat enters over an area rather than at a point. The jacket is stamped for 50 PSI maximum working pressure. The crank drives a worm gear, which means a full vessel cannot run away mid-pour and the rate is whatever the cook chooses. An inclined agitator works the batch at an angle, reaching the wall where a vertical paddle would only turn the middle.

The cooking interior is 316 stainless with a 304 jacket around it, as the sheet specifies. The liner is type 316 stainless, the grade to have where tomato and salt are routine. Two control packages are offered, Classic and Advanced. Groen lists the DEE/4T-40CINA/2 to UL, NSF and ASME. Cleaning is a wash and a rinse rather than a strip-down.
