Groen DEE/4T-40AINA/2 40 Gallon Steam Jacketed Kettle - 2/3 Jacket, Inclined Agitator

Thick product at 40 gallons is what the DEE/4T-40AINA/2 is specified for. Floor mounting has to take the weight of the vessel and the mixing head together. Its steam source is self-contained and electrically heated, so the site needs a circuit rather than a boiler room or a gas main.

The jacket covers the lower two thirds of the body, which puts heated metal alongside the batch as well as beneath it. The jacket is stamped for 50 PSI maximum working pressure. The crank drives a worm gear, which means a full vessel cannot run away mid-pour and the rate is whatever the cook chooses. Mixing is by inclined head, set on a slant so the charge folds over itself rather than rotating in place.

A 316 stainless interior sits inside a 304 body. Type 316 stainless lines the vessel, the grade to have where tomato and salt are routine. Groen builds it with Classic or Advanced controls and nothing more elaborate. Groen lists the DEE/4T-40AINA/2 to UL, NSF and ASME. A stainless bowl of this shape washes out in one pass.
