Groen DEE/4-40A 40 Gallon Steam Jacketed Kettle - Manual Tilt

At 40 gallons the DEE/4-40A is bought where the batch is cooked in volume and has to be moved to pans afterwards. It stands on the deck in its own support, with the trunnion built into the same assembly. Power is the only service it asks for, since the steam is raised inside the unit.

Steam condensing on the outside of the vessel does the heating, which is why a thick product can be held rather than stirred constantly. Jacket pressure is capped at 50 PSI. Tilting is crank-driven and self-locking, so a pour can be stopped part way and restarted without losing the angle.

The kettle is built in 316 stainless in one welded piece, which leaves no internal seam for product to sit in. The interior is polished to 180 emery grit, a finer finish than a pan carries and one that leaves nothing for a thick product to key into. Lining is 316 stainless. Three packages are offered, from Classic with its temperature knob and indicator lights up to Cook2Temp with a core probe. It carries UL, NSF and ASME listings.

Overall dimensions are 28-1/4 Inch wide, 30-3/4 Inch deep and 56 Inch high, so the aisle either side has to allow for a loaded transport pan. It is offered for 208 V or 240 V, single or three phase service; choose the electrical option above. The floor support should be level before the vessel is loaded, and the arc in front of it kept clear.
