Timed, pressureless steaming is the whole idea behind the (2)GSSP-BL-3ES, which holds three 12 x 20 x 2-1/2 in pans to a cavity. The steam is raised by electric elements, so the site needs no boiler room and no fuel line. That is six across the stacked pair.

There is no boiler in the machine, and generating the steam in the cavity itself takes the blowdown, the boiler descaling and the standby losses out of the weekly routine. Groen states 9 kW per cavity, which works out at 3.0 kW for each 2-1/2 in deep pan. Convection is what makes a full load even, because moving steam reaches the back of a cavity where still steam does not. The delime schedule is programmable from the screen, so descaling becomes a calendar item instead of a callout.

The build is all stainless, cavity and cabinet alike, and the side panels are removable. An insulated, field-reversible door keeps the radiant heat in and lets the hinge side be decided on site; the seal is a single replaceable piece. Stainless steel lines the cavity. A water-resistant touchscreen runs it, with self-diagnostics behind the screen and ten pan timers that take the name of the product. It carries UL, cUL and NSF listings.

Stacked on a stand, the pair occupies one footprint, and the height of the upper door is worth checking against the cooks who will load it.
