Doyon SRO2G Signature Roll-In Rotating Rack Gas Oven, 2-Rack Capacity, 275,000 BTU
The Doyon SRO2G is a Signature roll-in rotating rack gas oven sized for one double rack or two single side-load racks. It is rated at 275,000 BTU/hr and is available for natural gas or liquid propane. The rack lift carries up to 1,500 lb, and a Type II hood comes standard.
Rotating Rack Baking at Scale
A whole rack rolls in, the oven lifts it and turns it through the air stream, and four adjustable air channels let you tune airflow from delicate macarons to caramelized roasts. Three fan speeds and a fan delay protect light products while they set.
Shot and pulse steam injection and Doyon's patented moisture evacuation system work together: steam for crust development early in the bake, then fast moisture removal for even browning.
