Doyon RAF100 Bakery Water Chiller, 26.4 Gallon Capacity

The Doyon RAF100 is a freestanding bakery water chiller that holds 26.4 gallons (100 liters) of potable water as cold as 35.6°F for dough mixing. It runs on 208-240V / 1-Phase service.

Control Dough Temperature with Cold Water

Cold water slows yeast during mixing and keeps friction heat from pushing dough over its target temperature. Paired with a water meter, it delivers the right amount of water at the right temperature.

A closed-tank system with built-in circulation tubes and a compressor using R449A refrigerant keeps the stored water cold; output flow equals input flow, and units can be connected for more capacity.
