Doyon KDPR23 Knock-Down Roll-In Retarder Proofer, 6 Double / 12 Single End-Load Rack Capacity
The Doyon KDPR23 is a knock-down roll-in retarder proofer sized for 12 single end-load, 12 single side-load or 6 double racks. It retards dough down to 36°F, then switches automatically to proofing at up to 110°F and 95% relative humidity, and runs on 208V / 1-Phase, 208V / 3-Phase, 240V / 1-Phase or 240V / 3-Phase service.
Assembled on Site, Controlled by Touchscreen
The cabinet ships flat as insulated stainless panels and is assembled on site, so a large proofer can go into a basement, upper floor or finished building without removing a door frame or window. Walls carry 3" of insulation and the doors 2".
An eye-level touchscreen programs the whole cycle: hold dough cold overnight, then warm and humidify it so it is proofed and ready when bakers arrive. A week of retard-and-proof schedules can be set at once.
