The Doyon KDP22 is a knock-down roll-in proofer sized for 8 single end-load, 8 single side-load or 4 double racks. It proofs from room temperature up to 110°F at up to 95% relative humidity, and runs on 208V / 1-Phase or 240V / 1-Phase service.
Assembled on Site, Controlled by Touchscreen
The cabinet ships flat as insulated stainless panels and is assembled on site, so a large proofer can go into a basement, upper floor or finished building without removing a door frame or window. Walls carry 3" of insulation and the doors 2".
An even-airflow heating system and automatic humidity injection from a single water line hold the right mix of heat and moisture, with no water pans to fill.
