Doyon AEF050 Spiral Mixer, 118 Qt. Bowl, 159 lb Dough Capacity, Jog & Reverse

The Doyon AEF050 is a 118-quart spiral mixer with a stationary stainless bowl that kneads up to 159 lb of dough (at about 60% hydration). It runs on 208-240V / 3-Phase service and adds jog and reverse bowl control.

Spiral Kneading for Better Dough

A spiral hook works the dough against a center post in a turning bowl, kneading it quickly with less friction and heat than a planetary mixer. Cooler dough means better yeast activity and stronger gluten, which is why bakeries use spirals for bread, bagel and pizza dough.

The mixer runs two speeds and switches from first to second automatically on a timer, with up to 9 stored speed-and-time programs. A belt drive keeps service simple compared with gearboxes, and a built-in drain plug makes washing the bowl easier.
