Commercial Masala Dabba / Indian Spice Box — Square Stainless Steel, 115 oz Compartments
The large commercial masala dabba — nine or twelve stainless steel inner boxes of 115 oz each, about three and a half quarts per spice, under one square lid. This is the spice box for the powders a busy Indian kitchen actually burns through, where anything smaller means someone is refilling in the middle of service.
Think of it as the main-line box. Turmeric, red chilli, coriander, cumin, garam masala — the four or five powders that go into nearly every dish on the menu and empty first. At this volume, refilling becomes a scheduled job done from the dry store rather than something a cook does one-handed during a rush.
Nine or twelve compartments
- 9 compartments — a 19 inch square, three by three. The usual choice: it covers the core powders with room for two or three beyond them.
- 12 compartments — 25.6" by 19", four by three. It needs the bench space to match. For high-volume kitchens and catering operations working a wide spice list at scale.
Inner boxes are 6 inches cubed in both configurations and interchangeable between them.
Why the capacity changes how the kitchen runs
Refill frequency is the hidden cost of an undersized spice box. Every top-up is a trip to the dry store, a lid off, and a gap in the line. It also exposes the spice: each time the cover comes off, air and kitchen steam get at what is underneath. A compartment that lasts a full service, or several, stays sealed longer, and spices that stay sealed hold their colour and their oils. That is the argument for 115 oz over 32 oz, and it only applies to the spices you go through quickly.
Build
- Square stainless steel body, heavier gauge than a domestic spice tin, made to sit on a stainless prep table and be treated like equipment.
- Each inner box lifts out on its own for washing, drying and refilling.
- Full-size cover seals the whole tray between services.
- Side handles at both ends — necessary rather than decorative once twelve compartments are loaded.

If this is more than you need
For cardamom, clove, pepper and the other spices that go in by the spoonful, 115 oz is more than a kitchen will get through before the spice ages. The 32 oz masala dabba holds a quart per compartment and suits those better. Running one of each is common.
