It is molded from an impact, stain and chip resistant plastic, so it survives the daily cycle from walk-in to deli case to dishwasher without the breakage cost of ceramic. Cambro deli crocks and the matching deli platter are molded from a durable plastic that resists impact, staining and chipping, with a rectangular footprint and shallow sidewalls suited to deli cases and buffet lines. The range is a 2.2 qt. crock (DC5), a 4.9 qt. crock (DC10) and a 3.4 qt. platter (DP15), each offered in Red, Black, White and Clear. Pieces nest for storage and accept optional crystal-clear covers that keep product covered in the cooler; the covers also work as risers or false bottoms under a crock to lift a shrinking batch toward the top of the case.

Running one container from prep to display cuts transfers, which saves labor and reduces the cross-contamination risk of re-plating. The plastic tolerates hot or cold product and the commercial dishwasher, and a chipped or cracked ceramic crock is no longer a line item.
