The Cambro 90CWD is a Camwear drain shelf sized for Ninth Size - GN 1/9 food pans. It sits inside a Camwear pan of the same size and holds product above the bottom so rinse water, thaw drip and melted ice collect underneath instead of around the food. Keep Product Out of Its Own Liquid

A drain shelf is a perforated Camwear polycarbonate platform that rests inside a standard GN food pan a short distance above the floor of the pan. Liquid passes through the openings and pools below the shelf, and the clear material lets staff see how much has collected without lifting anything out. Camwear is stain, acid and odor resistant and withstands -40°F to 210°F, so the shelf goes from walk-in to prep rail to high-heat dish machine with the pan it lives in. Drain shelves are compatible with every Camwear food pan cover, so the assembly can be sealed for storage.

In use this slows spoilage and protects flavor: washed produce drains and stays crisp, thawing meat and poultry are not sitting in their own juices, and seafood held on ice stays above the melt.
