Wide-format steaming without a boiler: the 10-2/1 GN Invoq injects steam directly into the chamber, so there is no generator to keep hot or descale. One chamber holds 10 full-size 2/1 GN pans or 20 half-size, up to 198.4 lbs of product, and draws 31.3 kW with 30 kW of that as convection heat. Convection runs to 572°F and steam to 265°F, and the whole thing is driven from an Android 9 controller that also handles cleaning and recipes.
