Helix is what separates this electric oven from the plain HydroVection: patented jets push air into the cavity and drive off the moisture product gives up as it cooks. Ordered as a base section, it sits at the bottom of a stack on 8-1/2" legs with casters. Six tubular elements draw 15 kW, a 3/4 HP auto-reversing motor with four speeds and a variable frequency drive moves the air, and five full-size pans load across ten rack positions.

• Patented Helix jets force air through the cavity and carry laden moisture out, which is the working difference from a standard hydrovection oven.
• SmartTouch2 is the control here rather than an option: a 7-inch touchscreen holding 500 recipes with rack timing and multi-shelf sequencing.
• As the bottom section of a stack, the welded 304 stainless liner with coved corners carries the compartment above and wipes down without a seam to trap soil.
• Hydrovection modes give low or high humidity, and cavity vent control releases steam when a crust needs to set.
• Up to 2.5" of blanket insulation and a dual pane Low-E door hold the heat inside the cavity.
