Sold on its own on 25" adjustable stainless legs, the HVH-100E is the Helix version of Blodgett's electric hydrovection oven. Air is forced into the 29" by 20" by 23.43" cavity and laden moisture is pushed back out, which is the difference between this and the standard HydroVection. Six tubular elements supply 15 kW per section, SmartTouch2 runs it from a 7-inch screen, and five full-size pans load through the split door onto ten rack positions.

• Helix jets drive air into the cavity and evacuate the moisture coming off the food, so roasts brown rather than steam.
• One compartment 29" wide takes five 18" x 26" full-size pans or ten 12" x 20" steam table pans across ten rack positions.
• SmartTouch2's 7-inch touchscreen holds 500 recipes, including rack timing and multi-shelf recipes, with USB transfer either way.
• Sides need no clearance and the back needs 6"; the oven passes a 25.56" doorway uncrated.
