Natural gas enters at 7.0" W.C. static, three inshot burners deliver 60,000 BTU/hr, and humidity is added incrementally instead of boiled. Five 18" x 26" pans or ten 12" x 20" steam table pans load through the split door, temperatures run 140 to 500 degrees F, and the oven occupies 38.1" by 48.7" with no clearance needed at the sides.
