Three inshot burners supply 60,000 BTU/hr per section at a 7.0" W.C. static inlet, and humidity is metered into the cavity rather than raised in a boiler. The compartment runs 29" wide by 23.43" deep, takes five 18" x 26" pans across ten rack positions, and weighs about 520 lbs per section.

• Incremental humidity plus a Hydroburst shot of 100% humidity covers bread, roasts and poached product from one cavity.
