Added above an oven already installed, this electric HydroVection section brings continuous humidity to a second cavity inside the same 38.1" wide footprint. Six tubular elements draw 15 kW per section and a four-speed auto-reversing fan moves the air, while incremental humidity control and the Hydroburst shot cover roasting, poaching and gratinating alongside dry baking. The 29" by 23.43" cavity holds five full-size 18" x 26" pans across ten rack positions, at 450 lbs per section.

• Incremental humidity control holds moisture in the cavity through the bake, and Hydroburst releases a shot of 100% humidity when a crust needs it.
• The split door opens both halves at once on a catch-latch system, so a cook can load the upper section one-handed.
• A dual pane tempered window with Low-E inner glass keeps the outer surface cool enough to pass in a tight aisle.
• Five stainless racks and ten positions take full-size sheet pans or ten 12" x 20" steam table pans per section.
