A standalone HydroVection on 25" adjustable stainless legs, the HV-100E suits kitchens that want humidified cooking without the footprint a combi needs. The cavity runs 29" wide, 20" high and 23.43" deep and holds five full-size sheet pans across ten rack positions. Six tubular elements supply 15 kW per section, humidity is metered into the cavity rather than boiled, temperatures run 140 to 500 degrees F, and the oven takes up 38.1" by 48.7" of floor.

• One compartment, continuously humidified: incremental humidity control with a Hydroburst shot of 100% humidity replaces a separate steamer for poaching and gratinating.
• A four-speed auto-reversing fan on a 3/4 H.P. three-phase motor keeps the bake even from rack to rack.
• Two halogen lights behind a dual pane tempered window with Low-E inner glass let cooks check product without opening the door.
• A hand shower is fitted for washdown and the cavity empties through a 1.25" O.D. drain connection.
