Blodgett BCX-14E Combi Oven - 208V/3ph, Single Section

Fourteen hotel pans of combi capacity, in a cabinet built around a fully welded stainless frame that resists the warping that eventually lets door seals leak. The BCX-14E is the electric version of Blodgett's heavy-duty combi, with a self-flushing steam generator held outside the cooking chamber so steam returns quickly after a mode change. Racks take fourteen 12 by 20 by 2-1/2 inch hotel pans or seven 18 by 26 inch sheet pans, and factory start-up is included.

• Fourteen 12 by 20 by 2-1/2 inch hotel pans load at 3-1/4 inch spacing, or seven full-size 18 by 26 inch sheet pans.
• The steam generator is self-contained and self-flushing and sits apart from the cavity, so moving between steam and convection does not wait on recovery.
• A dual stage latch lets steam out before the door opens fully, and a cavity vent switch releases steam during a cook.
• The standard programmable control stores 100 recipes; an optional SmartTouch2 7-inch touchscreen stores 500, with USB transfer and a removable 4-inch core probe.
• A time-to-delime indicator can be set to 30, 60 or 90 hours, and the auto delime system runs from its own bottle and pump.
• It is sold as a single unit or as an additional section for stacking on an existing BCX-14E, the latter shipping with 4-inch casters and stacking hardware.
