Overview

A refrigerated prep table holds food pans of toppings in a chilled rail above a refrigerated base, with a cutting board running the full length of the front. Orders are built in one place with every ingredient within reach.

Forced cold air keeps the pan rail and the cabinet below at food-safe temperatures, and an insulated lid covers the pans during slow periods and overnight.
