Eleven and a quarter inches long on a five and a half inch width, the SH-211 is built for food laid in a line: sashimi, grilled skewers, a row of dessert bites. Crossing the ten-inch mark makes it a rectangular platter rather than a plate, and in practice it is used that way, set down in the middle for two or three people to work from.

The length gives a kitchen room to alternate two components without either crowding the other. Twenty-four to a case puts it in the same pack depth as the SH-210, which is how many venues buy the pair.
