A rectangular plate changes how a kitchen composes a course. Nine and a half inches by six and three quarters gives a long axis to line food up along - a sandwich with its sides, a skewer, two or three small items in a row - which a round of the same area cannot do. At half an inch deep it is flat by design.

Tan suits the cafes and delis where rectangles do the heavy lifting: a panini with chips and a pickle, a breakfast plate, a bento-style lunch.
