Prepared foods sell better over warm colour, and this tray's speckled red ground does useful work beneath sushi rolls, rice balls and dumplings. Fourteen inches of run takes two eight-piece rolls side by side, with 5-1/2 inches of width leaving a margin for a soy pot or a ginger mound at one end.

Speckling breaks up the scratch marks that a flat colour would advertise after a few months of chopstick and tong traffic. One inch of rim is shallow enough for a customer to lift an item out without tipping the whole piece, which is what a self-service chilled shelf asks for.
