Tri-Gen is Winco's tri-ply construction: a conductive aluminum core bonded between an 18/8 stainless cooking surface and a magnetic stainless exterior. The core moves heat sideways through the pan wall rather than straight up from the burner ring, and the outer layer is what an induction coil reads.
