Shaan 28" Commercial Gas Tandoor Clay Oven — ETL Certified
Two kitchens buy the 28 inch. The first has a small dining room or a takeaway counter and needs a real commercial tandoor without giving up three feet of cookline. The second already runs a larger tandoor and wants a second one doing nothing but bread, so the skewers stop competing with the naan at seven o'clock.
Being the smallest fixed model does not mean a smaller clay body. The wall is the same 2 inch stone clay as the 34, which is the specification that decides how a tandoor behaves: the clay stores the heat and cooks the food, and the burner exists to keep the clay hot. A smaller chamber with a full-thickness wall comes back to temperature quickly, which is exactly what a bread-only oven needs when the mouth is opening every ninety seconds.
Manufacture is by Tandoori Oven Ltd in the United Kingdom. Nishi Enterprise Inc is the authorized distributor for the United States and Canada; burners, valves, thermocouples, baffle plates, lava rock and repair clay are held in South Plainfield, New Jersey.
Features
- The smallest fixed commercial Shaan — a full-specification tandoor for a line that cannot spare the width
- Full 2 inch stone clay wall, same as the larger models — the size is smaller, the build is not
- Triple-layer insulation — keeps the heat in the clay and out of a small kitchen, where every extra degree is felt
- Reinforcing rings and a hardened inner face — the pot is braced where repeated firing would otherwise open a crack
- Flame-failure protection as standard: thermocouple and pilot igniter close the gas if the burner goes out
- Ships configured for natural gas, with an LP conversion available
- Stainless shell on 4 inch swivel casters — it rolls, which matters most where access is tight
- Naan bread pad, stainless mouth cover and 1 lb maintenance clay included
Certification
A forty-seat room is inspected on the same terms as a two-hundred-seat one, and a small operator has less room to absorb a failed permit. Shaan holds the gas listings — ANSI Z83.11 under the ETL Listed Mark, CAN/CSA-1.8 under the cETL Listed Mark — and the sanitation listing, NSF/ANSI 4 under the ETL Sanitation Listed Mark. One answers the fire marshal, the other the health department, and both can be checked in Intertek's Directory of Listed Products under Tandoori Oven Ltd or Nishi Enterprise Inc.
Shaan was the first tandoor anywhere in the world to carry both, in January 2009. Before that the category came into this country unlisted, and the problem became the operator's at permit time.
Installation
Plan the hood before the oven. A commercial tandoor of any size needs Type I ventilation under the International Mechanical Code and NFPA 96, and retrofitting that into a compact kitchen is the expensive half of the job — worth pricing before you commit to the oven. Gas is connected by a licensed installer working to NFPA 54, a regulator may be needed depending on supply pressure, and clearances to combustibles come from the manual and your local code. Shipping is freight; ask for a liftgate if there is no dock.

No warranty is offered on the clay pot. Hairline crazing is a natural characteristic of fired clay under repeated heat cycling and does not affect cooking; the maintenance clay supplied with the oven is for exactly that.
