If your cooks are tired of relighting pilots and guessing at dial settings, the MagiKitch'n MKG-36-E is a smart step up. It pairs a heavy 1-inch thick polished griddle plate with electric thermostats and matchless ignition, a good match for busy breakfast lines, hotel kitchens and quick-service menus built around burgers and sandwiches.

The 36-inch griddle runs six stainless steel venturi burners for a total of 90,000 BTU/hr. Three electric thermostats, one every 12 inches, can be set from 200°F to 550°F, which gives you the extra heat for hard sears that a standard snap action control does not reach. The cooking surface is 35-3/4" wide by 24" deep.

What you will notice in day-to-day use

• Hotter when you need it. Electric thermostats reach up to 550°F, handy for crusting smash burgers or searing steak and fajita meat.
• Pilots light themselves. Matchless ignition fires the pilot automatically when the power is turned on, and recessed power switches, pilot-ready lights and a heat-on indicator show the status at a glance.
• Reads the plate, not the air. Temperature probes are embedded in the plate for faster response and more accurate surface temperatures.
• A big grease box. The 3-1/2" front trough and fully welded chute drain into a 3.75 gallon grease box with a splash zone compartment, so you empty it less often.
• Safe and tidy. Each pilot has flame loss safety shutoff, and the double-walled stainless sides and tapered splash back keep heat and grease in check.

Choosing your setup

Gas type: this griddle is offered for natural gas or liquid propane (LP); choose the gas your kitchen uses above. The gas regulator and shutoff come factory installed. Burner and supply pressures for each gas are below.

Before it arrives

• Gas: 3/4" gas connection; a qualified installer should size the supply line to hold burner pressure with every appliance on full.
• Power: the matchless ignition and thermostats need a 115V supply; draw is only 0.66 A.
• Ventilation: install under a commercial hood following local code, and do not block the flue or place hood drains over it.
• Clearance: keep 6" at the rear and 2" at the sides from combustible surfaces (0" sides next to non-combustible). If you mount it on a stand with casters, use a flexible gas hose with a restraint.
• Delivery: ships crated at about 520 lb (52" x 45" x 42"); stands ship separately.
