Aluminum Braziers
C.A.C. aluminum braziers are wide, shallow pots designed for browning, braising, simmering, and slow cooking. Their shape provides maximum surface contact with the heat source, making them ideal for searing meats before braising, reducing sauces and gravies at volume, and preparing curry bases in large batches. We carry C.A.C. braziers in 15 qt, 18 qt, 35 qt, and 40 qt capacities. The 6mm thick aluminum bottom distributes heat evenly and retains it efficiently, which is critical for long simmering times and consistent results across large batches. In Indian restaurant kitchens, these braziers are commonly used for cooking nihari, haleem, large-batch curry and gravy bases, and any dish that benefits from slow, even heat over an extended period.
